What ceremonial grade means
Matcha grades by leaf and milling: ceremonial designates the young, tender harvest milled fine enough to whisk into a smooth bowl and drink straight — as against culinary grades destined for baking’s rough company. The tell is in the cup: bright colour, silky texture, fresh grassy-sweet character without the harsh bitterness that gives cheap matcha its reputation. How to prepare it
