There is almond flour, and then there is organic almond flour that has been cold-pressed — and the difference matters more than most bakers realise. Sattva Superfoods Organic Almond Flour starts as nothing but organically grown almonds: they are ground, then cold-pressed to remove around 80% of the natural oils. What is left is a fine, light flour that is high in protein and fibre, low in fat, and naturally gluten-free — a single-ingredient staple for keto, low-carb and gluten-free kitchens.
Not the same as ground almonds
Ordinary ground almonds keep all their oil. That makes them heavy and moist — fine for a frangipane, less fine for bread, pancakes or pastry that needs structure. Because most of the oil is pressed out of this flour, it behaves far more like a true flour: it is drier, finer, lighter, and absorbs liquid properly, so bakes rise better and hold their shape instead of turning greasy or dense.

This product is free from peanut, peanut oil, sesame seeds, milk and derivatives, eggs, fish, shellfish, soya, wheat and gluten, sulphites and GMO. (It is, of course, a tree-nut product — it is made entirely of almonds.)
Storage
Keep the pack tightly resealed in a cool, dry cupboard away from direct sunlight. Because most of the oil has been removed, cold-pressed almond flour keeps better than oily ground almonds — but as with any nut product, freshness is flavour, so reseal it properly after each use.

Swapping it into your recipes
Because cold-pressed almond flour is drier than ground almonds, it is not a straight 1:1 swap in recipes written for ground almonds — expect to need noticeably more liquid, or slightly less flour. When replacing wheat flour, almond flour has no gluten to bind, so recipes benefit from eggs or another binder. Once you have a feel for how it absorbs, improvising gets easy — a few tablespoons thicken a sauce or bulk up porridge without changing the flavour.
