Criollo, the fine-flavour bean

Most of the world’s cocoa comes from high-yield bulk varieties; Criollo is the other tradition — a small fraction of global harvest, cherished since pre-Columbian times for aromatic complexity and low bitterness. Natural vs Dutch-processed
