A proper chicken bone broth takes time most kitchens don’t have — 30 to 72 hours of slow simmering while the goodness of the bones infuses the liquid. Mattisson does the simmering for you, organically, and then goes one step further: this 240 ml jar is a Thai-style broth, simmered from chicken carcass with lemongrass, red chilli, thyme, bay leaf and clove, ready to drink or to anchor a soup.
What makes this a Thai-style broth
Alongside the classic soup vegetables — onion, carrot, celery, leek, garlic — the pot gets lemongrass, red chilli pepper and a touch of organic soy sauce. The result drinks beautifully on its own and turns into a strikingly good tom kha gai base with little more than coconut milk, mushrooms and lime. Everything in the jar is organic, and there are no flavour enhancers or preservatives of any kind.
Broth or fond? Actually, it’s closer to a fond
This broth is reduced further than a normal stock, which makes it thicker, darker and fuller-flavoured — more gelatine, more body. Use it neat where you want intensity, or simply add water to stretch it back to a classic stock. Per 100 ml it carries 2.46 g of protein, of which 1.12 g is collagen — the natural result of long-simmered bones, listed plainly in the nutrition table below.

Storage
Unopened, keep the jar in a cool, dark cupboard. Once opened, refrigerate (max 7 °C) and use within 3 days — in practice, one jar rarely survives that long.

Is it spicy? The chilli is aromatic rather than aggressive — warmth, not fire; add fresh chilli if you want heat.
Can I freeze leftovers? Yes — an ice-cube tray of broth cubes is the professional cheat for single-portion flavour.
