Shiro miso is made from organic soya beans and white rice. Thanks in part to the fact that the fermentation process takes just two to six weeks, the flavour is mild and slightly sweet. You can definitely taste umami too, however. Shiro miso is made using authentic techniques in Japan, ferments for two to six weeks and is 100% gluten-free. It works well with cabbage-like vegetables and root vegetables as well as ginger, but is also delicious when used in snacks and desserts (ice cream!). In Japan, shiro miso is often mixed with other misos.
Shiro miso is the mildest of the four kinds of miso.
How to use it
Use 1 tablespoon to replace a stock cube or as 200 ml (light) miso soup. Use as a base for sauce, marinade or dressing or even in desserts, ice creams or hummus.
How you keep it
After opening, store in the refrigerator for a maximum of 3 months.
