Genmai miso (unpasteurised) is a medium-strong Japanese seasoning, which is made using traditional techniques from fermented soya beans and unpolished brown rice. Fermentation period: minimum of 18 months.

Genmai miso is a delicious seasoning made from organic soya beans and unpolished brown rice. Genmai miso fits well in both Japanese and European cuisine. Genmai miso ferments for a minimum of 18 months in 100-year-old cedar casks, in the charismatic hands of our experienced Japanese experts. Genmai miso is ideal as a base for miso soups, fish and meat dishes, sauces and dressings. Also delicious in combination with pulses or cabbage-like vegetables. Genmai miso has a medium-strong flavour.
How to use it: Use 1 tablespoon to replace a stock cube or use it for 200 ml miso soup. Use as a base for sauce, marinade or dressing.
How you keep it: After opening, store in the refrigerator for a maximum of 3 months.
